Do you dread hearing the words, “what’s for dinner?” Ok, maybe not all the time but there are definitely those days right?
This is a meal I make in a pinch. It’s the perfect option for those busier days and in this post, I will share a few ways you can get these made for your family and fast!
There are a few ways you can make these so choose the best fit for you and your crew.
Sometimes I try to go the healthier route and sometimes, not so much.
Although you can cook your own chicken, I prefer store bought rotisserie chicken that I take home and shred, or for an even faster option, canned chicken. Yes…canned chicken actually taste amazing in this meal. Just open the can, drain the water and shred the chicken with a fork. Then all you have to do is add a little salt, pepper and garlic salt once you add the desired amount to your flour tortilla. I add a small handful of chicken for a folded quesadilla.
These instructions make 6 quesadillas.
For 6 quesadillas, 2 large cans of chicken will do. Smashed with a fork, the chicken shreds apart. If you’d like to make more, just increase the amount of cans you use. A rotisserie chicken will definitely give you more. You can always save the left over chicken for salads or freeze it for another quesadilla night.
Choose a large tortilla. You can choose gluten free, smaller corn tortillas or whatever you like best. We have grown found of the La Banderita brand.
Next step is cheese. Again you can use what you want but I suggest shredded Mexican cheese.
to season the canned chicken, I just sprinkle a little salt, pepper and garlic powder right into the meat after I add it to the tortilla. A little goes a long way, especially if you will use salsa, sour cream or guacamole for dipping.
Last but not least, choose your dips. We love salsa, sour cream and guacamole. I love mixing a little sour cream with my salsa. Try it, it’s very yummy.
You can use a frying pan to make these but I use an electric griddle. It speeds up the process since you can fit four on at a time.
Turn your griddle to 350 and coat lightly with butter.
Lay your tortilla down on the griddle and fill one half of the tortilla with a handful of chicken.
Add a little salt, pepper and garlic powder to your chicken.
Add a handful of shredded Mexican cheese.
Using a spatula, fold the tortilla to create your quesadilla. (Like photo below).
6. When the underside is the desired golden color, flip and cook on the other side.
7. Once it is cooked, lay it on a cutting board. You can use a large knife or pizza cutter. I cut ours in the center first, creating two pieces. Then again in the center of those pieces to create four sections per quesadilla.
8. Serve with your favorite dipping sauce and that’s it! You can even use disposable plates for less clean up.
